I have been finding new ways to use all the persimmons I have been getting in our CSA basket lately. This is by far one of my favorites. I served it warm, but it totally works room temp too. Start with the perfect lentils recipe. You can make a big batch ahead of time to use throughout the week, just reheat and toss with persimmon and shallot and you are good to go.
