Easy Green Breakfast Muffins

I discovered green muffins from The Tribe a few weeks ago, and have slowly been perfecting my own spin on them. Infusing them with superfoods and adaptagens. They are so delicious and both my kids LOVE them. They are great to make ahead and then have a quick grab and go breakfast, especially on those mornings when you are short on time. We had a super late morning today in fact, and I just grabbed a few of these and we ate them in the car on the way to school drop off. Not picture perfect, but we do our best, right mamas? What i love about these is that the greens are raw, so you don’t have to cook anything in advance, and they are super easy to throw together. I love that they have so many health properties and a great way to start your morning. Here’s the recipe, adapted from The Tribe, with my own superfood twist.

Health properties include immune support, stress relief, digestive health, heart health, energy boost and tons more. With the combination of the Reishi, Tocos, Chia and Flax you have a winning combo here my friends!

Mom Monday {Apple Pie Smoothie}

With our CSA basket overflowing with apples, as we enter apple season, I was inspired to try something new for our breakfast smoothies. This was a huge hit with the whole family. It’s packed with protein and full of apple pie flavors. This is definitely my new favorite smoothie combo. Use the milk of your choice to make it your own. Enjoy!

7 New Breakfast Ideas

I have been searching for some fun new ideas for breakfast. If I can make them ahead of time even better…here are some of my favorites I am dying to try.7-NEW-BREAKFAST-IDEAS1

Mom Monday {Healthy Desserts for Breakfast}

It’s no secret that it can be difficult to get your kids to eat what you want them to eat, when you want them to eat it. These fabulous twists on traditional desserts make them enticing breakfast options for your kids, and they are packed with super foods and healthy goodness. Let me know if you give these a try. I personally cannot wait to try my hand at breakfast popsicles! For the recipes that don’t have it, an easy way to boost these recipes is by adding some goji berry powder, or flax, hemp and/or chia seeds. Instant superfood!

Mom Monday {Breakfast Cupcakes}

I had such a fun time cooking with Piper this weekend I just had to share. I was inspired by this recipe for Apricot Pecan Breakfast bars, to create something that we could have on hand for an easy breakfast. Piper loves anything in cupcake form and recently began helping me cook. It’s such a fun thing for us to do together.

These are great to cook with the kids. I measure things out, then she dumps them in the bowls and stirs everything around. Then, the best part, she gets to lick the spoon! I have such fond memories of doing this with my grandmother. The key is to make something delicious and healthy. These are the perfect breakfast. They have fruits, nuts, antioxidants, oats, and they taste delicious!!

The bananas and dates act as the sweetener, so there is no need to add sugars of any kind!
