We try and limit our dairy intake at home since my oldest daughter has a dairy sensitivity. But the thing is she LOVES cheese, especially mac and cheese. I mean what kid doesn’t? I don’t mean the gross orange kind in a box but the kind with tons of real cheese and milk. So I had to come up with another way to get that creamy, cheesy feel without the dairy. This butternut squash creamy mac and cheese is so amazing, the entire family LOVED it which is a huge win. The butternut squash gives it that fun orange color, and the cashew cream gives it a silky creamy feel, with the nutritional yeast adding a bit of cheesiness. Give it a try friends! It’s super easy, and super yummy!
I discovered green muffins from The Tribe a few weeks ago, and have slowly been perfecting my own spin on them. Infusing them with superfoods and adaptagens. They are so delicious and both my kids LOVE them. They are great to make ahead and then have a quick grab and go breakfast, especially on those mornings when you are short on time. We had a super late morning today in fact, and I just grabbed a few of these and we ate them in the car on the way to school drop off. Not picture perfect, but we do our best, right mamas? What i love about these is that the greens are raw, so you don’t have to cook anything in advance, and they are super easy to throw together. I love that they have so many health properties and a great way to start your morning. Here’s the recipe, adapted from The Tribe, with my own superfood twist.
Health properties include immune support, stress relief, digestive health, heart health, energy boost and tons more. With the combination of the Reishi, Tocos, Chia and Flax you have a winning combo here my friends!
The other weekend I got together with the adorable Melody of the infamous Sweet and Saucy and the completely addicting @lifeonloma. We both share a love for cooking as well as healthy good food so we decided to plan a cooking date. The husbands hung out and watched the kids while we cooked and visited. We had such a fabulous time and it was such a fun way to get together! We were both so intrigued by the idea of sweet potato toast and decided to try our hand at it. The overall result was fabulous and you literally just put raw thin slices of sweet potato in a toaster on high and voila! Super cool. I will say if you are planning on making a lot of these however, a 2 slot toaster is not the most efficient. Making it a “make your own toast bar” style was super fun, and great for the kids to get involved as well. Things like tahini and goji berries, roasted red peppers, goat cheese and roasted garlic, or vegan mayo with sliced turkey were fun toppings, not to mention a killer beet salad Melody picked up at Whole Foods. Of course our cooking date wasn’t complete without a little dessert. I had made these Vanilla Caramel Coconut raw donut holes before, recipe from This Rawsome Vegan Life. They were super easy and so good so we decided to make them together. Of course the being the dessert queen that she is, Melody caramelized the glaze a bit longer to create crispy caramel like shell that was to die for! I need to try and recreate that this weekend when I make these for Greyson’s first birthday party. Wish me luck!
The time has finally come, public access to one of my favorite sales of the year, the Nordstrom Anniversary sale. I have selected my favorites below including this travel shawl and this Frye tote! that I need asap. Now if all that shopping has made you hungry I have a treat for you. I made these eggplant bahn mi sandwiches last night and my mind was literally blown! The hoisin glazed eggplant between crisp sesame cucumber slices and pickled carrots, avocado and fresh herbs and the punch from the siracha mayo…seriously do yourself a favor and make this one asap. Sipping on Rosé all day is a fabulous way to spend the summer but I am definitely curious about this twist on the trend. Rosé lillet cocktails! Yum. Take advantage of the warm summer nights and get yourselves and your loved ones outside for an outdoor movie night!
So sorry for my radio silence. I have been battling a pretty bad cold, but finally feeling on the mend. Todays Friday Faves are so fun. From vegan meatballs that look amazing! to super simple cocktails that have just the right amount of sweet and sour.
