We try and limit our dairy intake at home since my oldest daughter has a dairy sensitivity. But the thing is she LOVES cheese, especially mac and cheese. I mean what kid doesn’t? I don’t mean the gross orange kind in a box but the kind with tons of real cheese and milk. So I had to come up with another way to get that creamy, cheesy feel without the dairy. This butternut squash creamy mac and cheese is so amazing, the entire family LOVED it which is a huge win. The butternut squash gives it that fun orange color, and the cashew cream gives it a silky creamy feel, with the nutritional yeast adding a bit of cheesiness. Give it a try friends! It’s super easy, and super yummy!
I whipped this up super fast for dinner last night and it was a huge hit with the entire family. The key to making this quick is to cook your grain of choice ahead of time in bulk, that way you have it ready to use throughout the week for lunch and dinner. I also had the corn leftover from a few nights ago, and the sauce was from the night before. So this took me all of about 10 minutes to prepare. Win win! For a little extra protein this would be great with some black beans as well.
This was one of those made up recipes that turned out so super good, and the entire family enjoyed them. Win! We are still eating our meals 75% of the time as “build your own” style since this seems to be the best way to get Piper to eat AND enjoy her dinner. The sweetness of the maple syrup glaze balanced out with the garlic and the saltiness of the proscuitto is a great combination! Truth be told I overcooked the eggs by just a minute so they weren’t really runny. But if you have that runny yolk, it really makes for a silky smooth sauce.
For those of you with picky eaters, this is such a great option for lunch or dinner. The fact that you are giving them options and control over their dinner really seems to resonate with little ones. Plus it’s super easy. Make sure to use a variety of vegetables as your “dippers” in a range of colors, for a rainbow effect. For the bean dip I just mixed beans with plain yogurt and garlic powder and voila! Let me know if you give it a try. It will even work for adults, for nice hors d’ouevres!
We made this super easy Burrata salad and it was so incredibly delicious. If you are not familiar with burrata you should do yourself a favor and go get some immediately. It’s basically like a super soft buffalo mozzarella with a super creamy filling and it’s pure heaven…
